1.Hakata Ramen&Nagahama Ramen  

丂"Hakata Ramen" is almost the same as "Nagahama Ramen".
White thick soup(sometimes reddish brown) & thin noodle are characteristic of Hakata Ramen. Hard & tough noodle will surely gives you unique feeling on your teeth !

丂Hakata Ramen has roots in unexpected sources. Noodle is from Taiwan dish, soup is from Ainu (aborigines of Japan) dish !  Most famous Hakata Ramen restaurants are
"IPPUDO" & "ICHIRAN".
ICHIRAN was once for members only ! Now,of cource you can enjoy ICHIRAN's Ramen whenever you'd like.

2. Kurume Ramen
Actually, the Kyushu-style Tonkotsu Ramen was born in Kurume by accident in 1937.
Kurume Ramen's noodle is thin (thicker than Hakata Ramen), soup is white & heavy.

丂You can distinguish Kurume Ramen from other style Ramen by it's ingredients.
Typical Kurume Ramen has a
"NORI"(laver) as its topping.


丂Most famous Kurume Ramen restaurants are "Maruboshi Ramen"(open around-the-clock),
"
Rairaiken"(in Kitakyushu, the pioneer of topping Nori on Ramen),Kairyu in Kitakyushu
(has a shop in Shinyokohama Raumen Museum).


Fukuoka
(North part of Kyushu-Island) is one of the most famous place for its delicious food,especially "
Tonkotsu Ramen" in Japan !

 乬Tonkotsu Ramen乭 is Fukuoka's typical dish which is nationally known. The soup, made of the pork bone , is different from other kinds of Ramen, which are soy sauce and miso and salt.
Pork bone is boiled丂for hours 乮perhaps,for a couple of days & more !乯 till they break into pieces.
